French Toast with Strawberry & Lime Compote

INGREDIENTS

2 eggs

80ml milk

2 slices of bread (brioche is best)

4 strawberries, quartered

Juice of ½ a lime

2 tbsp honey

STEPS

Whisk the eggs, milk and a pinch of salt together in a shallow bowl.

Soak the bread in the egg mixture, one at a time.

Preheat skillet or griddle to a medium heat and add a knob of butter to the pan.

Once soaked on both sides add to pan, flip on both sides until golden brown.

Meanwhile, in a saucepan add strawberries, lime juice and honey and cook for 3 minutes or until strawberries are slightly soft

Serve with strawberry and lime compote on top of the french toast.
