50g tomatoes
1 onion
½ bell pepper, finely diced
75g black beans, cooked
4 eggs
Optional: 2 tortillas
To garnish: bunch of cilantro, chopped
Preheat a frying pan to medium-high heat. Add a splash of oil.
Cook onions, pepper and tomato for 5 minutes, or until onions are translucent.
Add black beans, create four wells in the mixture. Crack the eggs into the wells, pop the lid on. Cook for 5 minutes. or until eggs are cooked.
Serve with cilantro and warmed tortillas.
