Lamb Meatball Curry with Coconut and Raisin Rice

INGREDIENTS

200g lamb mince

2 medium onions

2 garlic cloves

3 tsp garam masala

1 tsp ras al hanout

1 medium tomato

For rice:

100g basmati rice

125ml coconut milk

20g raisins

STEPS

Put meatball ingredients into bowl ( ½ onion, 1 tsp garam masala, 200g lamb mince). Mix well, roll out golf-ball sized meatballs, and set aside.

2 tbsp olive oil in large pan. Add spices first, create paste. Add onions, soften. Add garlic, tomatoes. Cook for 3 mins. Pour 100ml of water into pan. Reduce on low heat.

Rice: Rice and milk in a sauce pan with lid. Medium-high heat, place lid on. Let the rice soak. Whilst the sauce is thickening.

Once rice is ready, the curry will be ready. Plate and garnish with coriander.
