75g spaghetti
2 eggs
black pepper
50g parmesan cheese
75g bacon/pancetta
Begin by bringing water to a boil in a saucepan.
Preheat a frying pan to medium-high heat. Add a splash of olive oil.
Add bacon to the pan, crisp up the bacon.
Beat eggs, parm, black pepper together in a bowl.
Add spaghetti to boiling water and cook until 2 minutes before aldente. Remove pasta from water to the pan with the bacon. Add
2 ladlefuls of pasta water. Add egg mixture, remove from heat. Key here is not to scramble eggs. Throughly coat spaghettti with egg and bacon.
Serve with extra black pepper and cheese.
